Nel 2015 è stato il primo whiskey imbottigliato a Derry, in Irlanda del Nord, in oltre un secolo.
L’etichetta, fondata da Ciaran Mulgrew, è un omaggio al soprannome di suo padre John, che per cinquant’anni gestì pub a Belfast con una riservatezza e una professionalità che gli valsero l’epiteto di ‘An Fear Ciuin’: “l’uomo tranquillo”.
La produzione è varia e spazia dai tradizionali Irish whiskey blended a una serie di single malt di svariati invecchiamenti (l’imbottigliamento base di 8 anni, gli ormai fuori produzione 12 anni e un’edizione limitata di 13 anni) e diverse maturazioni. Ogni single malt è distillato tre volte in alambicco pot still in una distilleria il cui nome non è rivelato, ma che i bene informati dicono essere Cooley.
