Last week we had the pleasure of a virtual conversation with Fabio Ermoli and Davide Romano: the result was a great talk (still available on our facebook page, just in case), in which they told us about their future plans and some behind the scenes of the indie bottler job. The conversation has been fueled by the four new releases of V&M, that we’ll review in the next days: today we start with a young Aultmore aged In bourbon cask for 9 years.

N: very open, very pleasant, very Speysider. There’s everything of the good characteristics of a young ex-
bourbon, everything points to freshness: yellow / white fruit (white peach), lemon sorbet, icing sugar and something buttery – fresh butter, shortbread, pandoro? There’s also a vegetal component, let’s say
margarine and fresh flowers, gardenia. Very pleasant.
P: always clean and full, almost austere; fresh fruit, apple, tangerine, pineapple yogurt. Very fresh and easy to drink, not too sweet, very balanced and delicate. Citrusy and grassy; afterwards notes of white
sugar again. It has a positive acidity, mouthwatering.
F: clean, grassy and malty, again white peach and pineapple. Peach pit.
Really pleasant: malty, fruity but not too sweet. A perfect example of a Whisky that tastes like Whisky, with all the freshness of a young Speysider in bourbon, where the cask behaved avoiding the extreme vanilla notes. 87/100. We found it on Whiskyitaly for 50 €, and that seems like a great price to us!
